Indo-Caribbean, evolving culture

Indo-Caribbean cuisine is a mix of the cuisines from India and the Caribbean. The cuisine has its origins in India but has been strongly influenced by Indian, West African and English traditions. With such a rich culture, we have so many amazing dishes to offer. Here are details on what you can expect at our Indo-Caribbean restaurants, cafes and hotels.

Street food

Strictly speaking, street food is anything that is sold outside of a restaurant or hotel. What we are talking about here is any dish that you can find in the streets of an Indian city. You can find samosas (with or without potato filling), puchkas, bhel pooris, onion puffs, poori prasad, kachumbar, pav bhaji, samosa chaas, rajasthali and much more.

Sticky rice and roti

Sticky rice is a staple dish that is served with curries, rotis and fritters. It is eaten with curry or curry sauces or with tamarind or raw mangoes. It has a sticky texture when eaten hot and is usually eaten with curries or curd sauces or a dip of your choice. You can find this dish in most Indian restaurants. Roti is a type of Indian flatbread. It is usually served with curry or as an accompaniment to idlis and dosa. You can find it in most Indian restaurants as well.

Curries and Daals

A curry is a dish that is made by cooking spices, vegetables and/or meat in a sauce. There are many different curries available in India. They differ depending on the region. Daals are a type of lentil that is used mostly for cooking. They come in different colours and shapes such as red, black and yellow. Gujarati, Maharashtrian and Goan curries are the most popular in India.

Indo-Chinese

Indo-Chinese cuisine is a fusion of Indian, Chinese and South-East Asian cuisines. It is sometimes referred to as Indochine. Indo-Chinese dishes are usually seafood based and are usually served with a side of French fries. The most popular Indo-Chinese dishes are chilli crab, red curry chicken, fried rice, oyster omelette, fish with black bean sauce, fish with ginger sauce, dim sims and prawn mee sua.

The preparation of food involves certain strict rules and regulations that must be followed strictly. An important step in the preparation of food is cleaning and washing of utensils after each use. The food items are generally served on a banana leaf or in a special banana leaf plate.

Sweets and Desserts

Sugar products such as jaggery, khoa, rava, toor, shrikhand etc. are used in different types of desserts. You can also find many desserts like halwa, kheer, Rasgulla, shrikhand, aloo puri, besan ki badam, Indian style ice-cream, panna cotta and many more.
