Recipe: Chicken Vindaloo

Vindaloo is one of the most popular dishes in Indian cuisine. It can be cooked with meat or vegetarian ingredients, so you can adapt it to your nutritional preferences. It’s a great dish for busy families or for entertaining dinner guests.

What Exactly Is Vindaloo?

Vindaloo is a popular Indian dish that has its origins in the Goa area of India. It’s a spicy dish that can be vegetarian or contain meats such as pork, chicken, or tofu. Because of the chiles, Indian vindaloo is blazing hot and spicy!

History of Vindaloo

Since there was no wine vinegar in India, Franciscan priests made their own from palm wine. Tamarind, black pepper, cinnamon, and cardamom were used as well as other regional seasonings. The most important addition, though, was a legacy of Portugal’s global empire: chilli peppers, which were imported from the Americas to India. When the British occupied India from 1797 to 1813, they were ecstatic to discover this East-meets-West cuisine, as well as Christian Goan cooks who, free of caste and religious constraints, were eager to prepare beef and pork dishes popular among ex-pats.

Vindaloo dishes in early British India cookbooks were true to the Goan original. When it was transported to England, however, the meal suffered the same fate as many other Indian dishes: it became another hot curry. The sharpness of vinegar faded away with the practice of marinating the meat, and the balance of spices was lost beneath a searing overabundance of chiles. Fortunately, many variations in Goa still harken back to the days when cinnamon and cardamom added an earthy elegance to the dish while keeping the heat in check.

Common Vindaloo Ingredients: 

Before you start cooking your Indian vindaloo, make sure you have all of the necessary ingredients! Vindaloo sauce is typically created with caramelized onions, curry paste, coconut milk, vinegar, ginger, chillies, jalapeno, garlic, chickpeas, lentils, and other spices such as garam masala, salt, pepper, paprika, and turmeric, among others.

You could add chicken breasts, tofu, or even extra veggies like zucchini, potatoes, and bell peppers to your Indian vindaloo if you want to add more texture or ingredients. Depending on how spicy you prefer your cuisine, you can alter the number of chillies and jalapeño you use!

Ingredients:

  • 700 gm chicken or pork
  • 8-10 garlic cloves
  • 2-3 pieces of ginger
  • Vinegar
  • Sugar
  • 2 tsp Kashmiri chilli
  • Black mustard seeds
  • Ghee (clarified butter)
  • curry leaves (optional)
  • Spice mix

Which Spices To Use?

Since select spices are key to perfect Vindaloo, you must have these ingredients:

  • Cumin
  • Ground yellow mustard seeds
  • Ground cinnamon
  • Ground cloves
  • Turmeric
  • Cayenne pepper
  • Paprika
  • Salt & Pepper

You may also use ghee (clarified butter), sun-dried tamarind, lemon juice, and brown sugar.

How Is Vindaloo Made?

  1. First, dry roast coriander seed, chilis, cumin, mustard seed, and whole spices till they’re fragrant and slightly browned.
  2. Now blend them with tamarind, ginger, garlic, & vinegar to a fine paste.
  3. Heat oil in a pan and add onions to it. Saute the onions till slightly cooked.
  4. Now add chicken or pork to the pan.
  5. Add pureed tomatoes and the spice mix.
  6. Add salt according to taste and water and then cook for 40-45 minutes on low-medium flame.
  7. In the end, add some sugar and cook for another minute.
  8. Your Vindaloo is ready to be served.

  • Naan bread
  • Basmati rice
  • Potatoes
  • Chappatis (Indian flat-bread)
  • Wraps
