  • 2 cups of full-fat milk
  • 2 tbsp of cornstarch
  • 2 tbsp of sugar
  • A handful of almonds and pistachios, chopped for garnish

  1. Begin by preparing the sweet syrup. In a saucepan, combine the sugar and water and heat over medium heat until the sugar has dissolved. Stir in the cardamom powder and saffron strands and bring the mixture to a boil. Allow it to cool.
  2. Next, prepare the rabri by heating the milk in a saucepan over medium heat until it comes to a boil. Reduce the heat and allow it to simmer, stirring frequently, until it has reduced to about half its original volume.
  3. In a separate bowl, mix the cornstarch with 2 tablespoons of water to form a smooth paste. Stir this mixture into the reduced milk and continue to cook, stirring constantly, until the mixture thickens. Remove from heat and let cool.
  4. To prepare the bread, heat the ghee in a large frying pan over medium heat. Once hot, add the bread slices and fry until they are golden brown on both sides. Remove from heat and drain on a paper towel to remove any excess ghee.
  5. To assemble the Shahi Tukda, dip each piece of fried bread into the sweet syrup, allowing it to soak up the syrup for a few seconds. Place the soaked bread on a serving plate.
  6. Spoon the rabri sauce over the bread, making sure to cover it completely. Garnish with chopped almonds, pistachios, and a few saffron strands.
